On the map Far Harad is the region running off the southern edge, beyond the belt of Near Harad and far from any Gondorian outpost. The realm's charts trailed off there, and even the Wise had little to say about the peoples of the far south.
What is known is mostly military. Sauron's reach extended into those lands, and levies came from them to his wars. At the Battle of the Pelennor Fields the defenders of Minas Tirith faced troops from Far Harad among the Southron contingents, and the account given in the story is frankly the impression of men who had never seen them before.
The Blue Wizards were said to have traveled into the east and south in the Second Age, and whatever influence they had there worked against Sauron, but no record of what they achieved survived in the west.
